This illustration is based on a true story. It happens every day. And sometimes the food hits the fan. I not only feel like someone is watching me when I eat my dessert, I experience it in 3-D. And I'm lucky if I don't get a pie in my face. I've been trained to swing my plate left and then right. Then right and over to the left to avoid those desperate paws. Meanwhile, she visually stings me with her evil eyes. And when I finally savor the last bite and set the plate down, Hana feverishly licks up every crumb. Every micro smear. Here is Hana's favorite no-bake Oreo cheesecake dessert. I posted this last summer, and it has never been a better time to make this treat. It is berry season again. Use any berry you like...
This is a mini version of my somewhat famous dessert. Only a few people have tried it. But they all said it is the best pie they've ever eaten! I usually use a whole carton of Oreos when I make this the first time. And make 3-4 small crusts. But here is the recipe for just one regular size...
18 Oreo cookies (filling removed)
6 tbsp melted butter
Pulse or blend the Oreos until they are crumbs. Mix in the melted butter. Now lightly press the crumbs into 9 inch pie plate. Bake 10 minutes at 350.
Now cream...
8 oz room temperature cream cheese
1/4 cup sugar
1/2 tsp vanilla extract
1/4 tsp almond extract
Spread the mixture into the cooled crust. Now pile on the fresh raspberries. I don't wash the raspberries from my garden. And remember if you do rinse them, they will absorb water and get mushy. Just saying.
Now on the stove add the following to a pan.
3/4 cup sugar
2 tbsp cornstarch
dash salt
1 cup water
Bring to a boil and stir until thickened. Remove from the heat and add a spoonful of butter, 1/4 tsp almond extract and a few drops red food coloring. Pour the cooled glaze over your raspberries and refrigerate until set. It tastes like Summer. With chocolate on the side.
